Heat oil in a large pan or wok. Add chopped onion and minced garlic, and sauté until fragrant.

Push the onion and garlic to one side of the pan and crack the eggs into the empty space. Scramble the eggs until cooked.

Add the mixed vegetables and cook until they are tender.

Add the cooked rice, soy sauce, sesame oil, salt, and black pepper. Stir-fry everything together until well combined.

Garnish with chopped scallions and serve hot.
