Zucchini is a summer squash and is actually a fruit, even though it is commonly referred to as a vegetable.

  1. Wash and chop the zucchini into small pieces.
  2. In a large pot, heat olive oil over medium heat and sauté the garlic until fragrant.
  3. Add the chopped zucchini to the pot and cook for 5 minutes, stirring occasionally.
  4. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  5. Remove from heat and let the soup cool for a few minutes.
  6. Transfer the soup to a blender and blend until smooth.
  7. Stir in the lemon juice, fresh basil leaves, salt, and black pepper.
  8. Refrigerate the soup for at least 1 hour to chill.
  9. Serve the chilled zucchini soup in bowls, optionally topped with a dollop of Greek yogurt and garnished with fresh basil leaves.
