Chilled Zucchini Soup

Zucchini is a summer squash and is actually a fruit, even though it is commonly referred to as a vegetable.
This is vegan, gluten free and low carb recipe. Dish can be prepared in 85 minutes. Even a beginner can handle preparing this dish. Number of ingredients: 10.

Wash and chop the zucchini into small pieces.

In a large pot, heat olive oil over medium heat and sauté the garlic until fragrant.

Add the chopped zucchini to the pot and cook for 5 minutes, stirring occasionally.

Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.

Remove from heat and let the soup cool for a few minutes.

Transfer the soup to a blender and blend until smooth.

Stir in the lemon juice, fresh basil leaves, salt, and black pepper.

Refrigerate the soup for at least 1 hour to chill.

Serve the chilled zucchini soup in bowls, optionally topped with a dollop of Greek yogurt and garnished with fresh basil leaves.
