Cut the avocados in half, remove the pit, and scoop out the flesh.

In a blender, combine the avocado flesh, lime juice, cucumber, cilantro, garlic, vegetable stock, salt, and black pepper.

Blend until smooth and creamy.

Transfer the mixture to a bowl and refrigerate for at least 30 minutes.

Serve chilled, topped with a dollop of Greek yogurt.
