Ingredients
  • 2 medium-sized Avocado
  • 4 tablespoon Fresh mint leaves
  • 2 tablespoon Lime juice
  • 2 cup Vegetable broth
  • 4 tablespoon Greek yogurt
  • 0.5 teaspoon Salt
  • 1 pinch Black pepper
  • 1 small Cucumber
Instructions
  1. Cut the avocados in half and remove the pits. Scoop out the flesh and place it in a blender.
  2. Add the fresh mint leaves, lime juice, vegetable broth, Greek yogurt, salt, and black pepper to the blender.
  3. Blend until smooth and creamy.
  4. Transfer the soup to a bowl and cover it. Refrigerate for at least 1 hour to chill.
  5. While the soup is chilling, thinly slice the cucumber.
  6. Serve the chilled avocado and mint soup in bowls, garnished with cucumber slices.
