  1. Preheat the oven to 375°F (190°C).
  2. Cut off the tops of the tomatoes and scoop out the seeds and pulp.
  3. In a skillet, heat olive oil over medium heat and sauté onion and garlic until translucent.
  4. Add chili beans and cook for 5 minutes.
  5. Season with salt and black pepper.
  6. Stuff the tomatoes with the chili bean mixture.
  7. Top each tomato with shredded cheddar cheese.
  8. Place the stuffed tomatoes in a baking dish and bake for 20 minutes.
  9. Remove from the oven and let them rest for 5 minutes.
  10. Garnish with chopped cilantro before serving.
