Preheat the oven to 375°F (190°C).

Cut off the tops of the tomatoes and scoop out the seeds and pulp.

In a skillet, heat olive oil over medium heat and sauté onion and garlic until translucent.

Add chili beans and cook for 5 minutes.

Season with salt and black pepper.

Stuff the tomatoes with the chili bean mixture.

Top each tomato with shredded cheddar cheese.

Place the stuffed tomatoes in a baking dish and bake for 20 minutes.

Remove from the oven and let them rest for 5 minutes.

Garnish with chopped cilantro before serving.
