  1. Rinse and drain the chickpeas.
  2. In a large bowl, mash the chickpeas with a fork or potato masher.
  3. Finely chop the red bell pepper, cucumber, red onion, and fresh parsley.
  4. Add the chopped vegetables to the bowl with the mashed chickpeas.
  5. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.
  6. Pour the dressing over the chickpea mixture and stir well to combine.
  7. Toast the bread slices if desired.
  8. Spread the chickpea salad mixture onto 4 slices of bread.
  9. Top with lettuce leaves and tomato slices.
  10. Place another slice of bread on top to make a sandwich.
  11. Cut the sandwiches in half and serve.
