Ingredients
  • 16 ounce Chestnuts
  • 1 cup Cherries
  • 2 teaspoon Balsamic Vinegar
  • 1 tablespoon Olive Oil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 1 teaspoon Fresh Thyme
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Cut a small 'X' on the flat side of each chestnut.
  3. Place the chestnuts on a baking sheet and roast for 20-25 minutes, until the shells open.
  4. Remove the chestnuts from the oven and let them cool slightly.
  5. Peel the chestnuts while they are still warm.
  6. In a large bowl, combine the peeled chestnuts, cherries, balsamic vinegar, olive oil, salt, black pepper, and fresh thyme.
  7. Toss everything together until well coated.
  8. Transfer the mixture to a baking dish and roast for an additional 5 minutes.
  9. Remove from the oven and let it rest for 5 minutes before serving.
