Heat olive oil in a large saucepan over medium heat. Add the onion, bell pepper, and tomato. Cook until softened, about 5 minutes.

Add the cracked wheat and cook for another 2 minutes, stirring constantly.

Pour in the vegetable broth, salt, black pepper, and cumin. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.

Remove from heat and let it rest for 10 minutes.

Fluff the pilaf with a fork and stir in the parsley and lemon juice.
