Ingredients
  • 500 gram Celery root
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 4 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Fresh thyme
  • 0.5 cup Heavy cream
Instructions
  1. Peel and chop the celery root, onion, and garlic cloves.
  2. Heat olive oil in a large pot over medium heat.
  3. Add the chopped onion and garlic cloves, sauté until translucent.
  4. Add the celery root and cook for a few minutes.
  5. Pour in the vegetable broth and bring to a boil.
  6. Reduce heat, cover, and simmer for about 20 minutes or until the celery root is tender.
  7. Remove from heat and let it cool slightly.
  8. Using a blender, puree the soup until smooth.
  9. Return the soup to the pot and reheat over low heat.
  10. Stir in the heavy cream, salt, black pepper, and fresh thyme.
  11. Cook for another 5 minutes, stirring occasionally.
  12. Serve hot and enjoy!
