  1. Preheat the oven to 400°F (200°C).
  2. Cut the cauliflower into florets and pulse in a food processor until it resembles rice.
  3. Place the cauliflower rice in a microwave-safe bowl and microwave for 5 minutes.
  4. Let the cauliflower rice cool, then transfer it to a clean kitchen towel and squeeze out as much liquid as possible.
  5. In a large bowl, combine the cauliflower rice, eggs, almond flour, garlic powder, salt, cilantro, and lime juice. Mix well.
  6. Line a baking sheet with parchment paper and scoop about 1/4 cup of the mixture onto the sheet, then flatten it into a tortilla shape.
  7. Repeat with the remaining mixture, leaving space between each tortilla.
  8. Bake for 20 minutes, or until the edges are golden brown.
  9. Remove from the oven and let the tortillas cool for 5 minutes.
  10. Heat a non-stick pan over medium heat and cook each tortilla for 2-3 minutes on each side, or until lightly browned.
  11. Serve the cauliflower tortillas warm with your favorite fillings.
