Ingredients
  • 500 gram Carrots
  • 1 piece Onion
  • 2 clove Garlic
  • 1 teaspoon Ginger
  • 1 teaspoon Cumin
  • 1 teaspoon Coriander
  • 0.5 teaspoon Cinnamon
  • 750 milliliter Vegetable Stock
  • 2 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice
  • 1 teaspoon Salt
  • 1 pinch Black Pepper
  • 2 tablespoon Fresh Coriander
Instructions
  1. Peel and chop the carrots, onion, garlic, and ginger.
  2. Heat olive oil in a large pot and sauté the onion, garlic, and ginger until fragrant.
  3. Add the carrots, cumin, coriander, and cinnamon to the pot and cook for 2 minutes.
  4. Pour in the vegetable stock and bring to a boil. Reduce heat and simmer for 20 minutes or until the carrots are tender.
  5. Use an immersion blender to blend the soup until smooth.
  6. Stir in the lemon juice, salt, and black pepper.
  7. Serve the soup hot, garnished with fresh coriander.
