Ingredients
  • 500 gram Carrots
  • 200 gram Red lentils
  • 1 piece Onion
  • 2 piece Garlic cloves
  • 4 cup Vegetable broth
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Fresh cilantro
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and cook until softened.
  2. Add carrots, lentils, vegetable broth, ground cumin, ground coriander, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until carrots and lentils are tender.
  3. Use an immersion blender or transfer the soup to a blender to puree until smooth.
  4. Serve hot, garnished with fresh cilantro. Enjoy!
