Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic. Cook until onion becomes translucent.

Add sliced carrots and vegetable broth to the pot. Bring to a boil and then reduce heat to simmer for about 15 minutes or until carrots are tender.

Remove the pot from heat. Using an immersion blender, blend the soup until smooth.

Stir in chopped cilantro and lemon juice. Season with salt and black pepper.

Return the pot to heat and cook for an additional 5 minutes.

Serve hot and garnish with fresh cilantro leaves, if desired.
