In a saucepan, combine sugar and water over medium heat. Stir until sugar dissolves.

Increase heat to high and let the mixture come to a boil.

Cook without stirring until the mixture turns amber in color, about 5-7 minutes.

Remove from heat and carefully pour in coconut milk. Be cautious as it may bubble up.

Return the saucepan to low heat and stir until the caramel is smooth and creamy.

Remove from heat and stir in vanilla extract and salt.
