Peel and chop the butternut squash, onion, and carrot.

In a large pot, heat some oil and sauté the onion, garlic, and ginger until fragrant.

Add the chopped butternut squash, carrot, curry powder, cumin, and cayenne pepper. Stir well.

Pour in the vegetable stock and coconut milk. Bring to a boil and then reduce heat to simmer for about 20 minutes or until the vegetables are tender.

Use an immersion blender or transfer the soup to a blender to puree until smooth.

Stir in lime juice, salt, and black pepper.

Serve hot, garnished with fresh cilantro.
