In a large pot, heat the coconut milk over medium heat.

Add the onion, garlic, thyme, and scotch bonnet pepper to the pot and cook until softened.

Add the callaloo leaves, okra, tomatoes, and vegetable stock to the pot.

Season with salt and black pepper.

Bring the stew to a boil, then reduce the heat and simmer for 20 minutes.

Stir in the lime juice.

Remove the scotch bonnet pepper before serving.
