Caldo Verde is considered one of Portugal’s national dishes and is often served during festive occasions, especially during the popular St. Martin’s Day celebrations.

  1. Peel and dice the potatoes.
  2. Chop the onion and garlic.
  3. In a large pot, heat olive oil over medium heat and sauté the onion and garlic until softened.
  4. Add the diced potatoes, salt, and water to the pot. Bring to a boil and cook for about 20 minutes or until the potatoes are tender.
  5. Meanwhile, remove the tough stems from the kale leaves and thinly slice them.
  6. Add the sliced kale to the pot and cook for an additional 5 minutes.
  7. Using a blender or immersion blender, puree the soup until smooth.
  8. Adjust the seasoning if necessary.
  9. Let the soup rest for 5 minutes before serving.
  10. Serve hot and enjoy!
