Ingredients
  • 2 teaspoon Olive Oil
  • 1 medium Onion
  • 2 clove Garlic
  • 2 medium Carrots
  • 2 stalk Celery
  • 2 small Zucchini
  • 1 medium Potato
  • 1 can Canned Tomatoes
  • 4 cup Vegetable Stock
  • 1 can Cannellini Beans
  • 1 cup Pasta
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoon Fresh Basil
  • 2 tablespoon Parmesan Cheese
Instructions
  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until translucent.
  3. Add carrots, celery, zucchini, and potato. Cook for 5 minutes.
  4. Stir in canned tomatoes and vegetable stock. Bring to a boil.
  5. Reduce heat and simmer for 15 minutes.
  6. Add cannellini beans and pasta. Cook for another 10 minutes or until pasta is al dente.
  7. Season with salt and black pepper.
  8. Serve hot, garnished with fresh basil and grated Parmesan cheese.
