Ingredients
  • 2 cup Red Beans
  • 1 cup Rice
  • 1 medium Onion
  • 1 medium Green Bell Pepper
  • 2 stalk Celery
  • 3 clove Garlic
  • 2 tablespoon Vegetable Oil
  • 2 tablespoon Cajun Seasoning
  • 1 teaspoon Thyme
  • 1 leaf Bay Leaf
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Hot Sauce
  • 2 stalk Green Onions
  • 1 tablespoon Parsley
Instructions
  1. Soak the red beans overnight in water.
  2. Drain and rinse the beans.
  3. In a large pot, heat the vegetable oil over medium heat.
  4. Add the onion, green bell pepper, celery, and garlic. Sauté until the vegetables are softened.
  5. Add the red beans, Cajun seasoning, thyme, bay leaf, salt, black pepper, and hot sauce to the pot.
  6. Stir well and add enough water to cover the beans.
  7. Bring to a boil, then reduce heat to low and simmer for 1 hour, or until the beans are tender.
  8. While the beans are cooking, prepare the rice according to package instructions.
  9. Once the beans are tender, remove the bay leaf and adjust the seasoning if needed.
  10. Serve the Cajun Reds over rice, garnished with green onions and parsley.
