In a saucepan, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until golden brown.

Add bulgur to the saucepan and cook for 2 minutes, stirring frequently.

Pour vegetable broth into the saucepan and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes or until the bulgur is tender and the liquid is absorbed.

In a separate pan, toast the almonds over medium heat until lightly browned.

Once the bulgur is cooked, remove from heat and let it rest for 5 minutes.

Fluff the bulgur with a fork and stir in the toasted almonds, dried cranberries, parsley, salt, and black pepper.
