Heat oil in a large pan and sauté onions, garlic, and ginger until golden brown.

Add red chili powder, turmeric powder, coriander powder, and cumin powder. Stir well.

Add tomatoes and cook until they turn mushy.

Add potatoes, carrots, cauliflower florets, and green peas. Mix well.

Pour in coconut milk and water. Season with salt.

Cover and simmer for 20 minutes or until the vegetables are cooked.
