Ingredients
  • 500 gram Broccoli
  • 500 gram Cauliflower
  • 1 small Onion
  • 2 clove Garlic
  • 4 cup Vegetable broth
  • 1 cup Coconut milk
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and sauté until fragrant.
  2. Add chopped broccoli and cauliflower to the pot, and stir for a few minutes.
  3. Pour in vegetable broth and bring to a boil. Reduce heat, cover, and simmer for about 20 minutes, or until the vegetables are tender.
  4. Remove from heat and let the soup cool slightly.
  5. Using a blender or immersion blender, puree the soup until smooth.
  6. Return the soup to the pot and stir in coconut milk. Season with salt and black pepper to taste.
  7. Heat the soup over low heat until warmed through.
  8. Serve hot and enjoy!
