  1. Press tofu to remove excess water and cut into cubes.
  2. In a bowl, mix soy sauce, rice vinegar, sesame oil, red chili flakes, cornstarch, and water to make the sauce.
  3. Heat cooking oil in a pan and add tofu cubes. Cook until golden brown.
  4. Remove tofu from the pan and set aside.
  5. In the same pan, add garlic, ginger, bell peppers, and onion. Stir-fry for a few minutes.
  6. Add the sauce mixture and cook until it thickens.
  7. Add the cooked tofu and cashews. Stir-fry for another minute.
  8. Garnish with green onions.
