Borscht

Borscht is considered one of the national dishes of Ukraine and is also popular in many Eastern European countries.
This is vegan and gluten free recipe. Dish can be prepared in 90 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 15.

Peel and grate the beetroot, carrots, and onion. Chop the cabbage.

In a large pot, sauté the onion and garlic until fragrant.

Add the grated beetroot, carrots, and tomato paste. Cook for 5 minutes.

Add the vegetable broth, potatoes, cabbage, bay leaves, vinegar, sugar, salt, and black pepper. Bring to a boil and simmer for 45 minutes.

Remove from heat and let it rest for 10 minutes.

Serve hot with a dollop of sour cream and garnish with fresh dill.
