Rinse the basmati rice under cold water until the water runs clear.

In a large pot, heat vegetable oil over medium heat. Add chopped onion, garlic, and ginger. Sauté until golden brown.

Add mixed vegetables and cook for 2-3 minutes.

Add turmeric powder, cumin powder, coriander powder, garam masala, and salt. Stir well.

Add rinsed basmati rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until the rice is cooked and the water is absorbed.

Remove from heat and let it rest for 5 minutes. Fluff the rice with a fork.
