Cook the brown rice according to package instructions.

In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until fragrant.

Add cumin, salt, and pepper to the pot, stir for a minute.

Add drained and rinsed black beans to the pot, along with vegetable stock. Bring to a simmer and cook for 15 minutes.

In a separate pan, heat olive oil over medium heat. Add minced garlic and chopped kale. Sauté until kale is wilted.

Add cooked brown rice to the pot of black beans, along with lime juice. Stir well to combine.
