Black beans are a great source of plant-based protein and are rich in fiber, folate, and antioxidants.

In a large pot, heat olive oil over medium heat. Add onion and garlic, and sauté until translucent.

Add carrot, celery, and red bell pepper. Cook for 5 minutes, stirring occasionally.

Add black beans, vegetable broth, diced tomatoes, corn kernels, cumin powder, chili powder, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.

Remove from heat and let it rest for 5 minutes.

Stir in lime juice and fresh cilantro.
