  4. Drain the soaked black beans and add them to the pot. Stir to combine.
  5. Add vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 25-30 minutes or until beans are tender.
  6. Meanwhile, cook rice according to package instructions.
  7. Once the beans are cooked, add diced tomato, lime juice, and chopped cilantro. Stir well and let it simmer for another 5 minutes.
