  2. Peel and slice the carrots into sticks.
  3. In a bowl, mix the olive oil, ground cumin, ground paprika, ground coriander, ground cinnamon, and salt.
  4. Add the carrot sticks to the bowl and toss to coat them with the spice mixture.
  5. Transfer the carrots to a baking sheet and spread them out in a single layer.
  6. Roast in the preheated oven for 20 minutes, or until the carrots are tender and slightly caramelized.
  7. Remove from the oven and drizzle with lemon juice.
  8. Garnish with fresh cilantro.
