Preheat the oven to 400°F (200°C).

Peel and dice the butternut squash into small cubes.

In a large bowl, combine the diced squash with chopped onion, minced garlic, grated ginger, turmeric, cumin, coriander, red chili powder, salt, and oil. Mix well to coat the squash evenly with the spices.

Spread the spiced squash mixture onto a baking sheet and roast in the preheated oven for 25-30 minutes, or until the squash is tender and slightly caramelized.

Remove from the oven and garnish with chopped cilantro.
