Preheat the oven to 400°F (200°C). Wrap the beets in aluminum foil and roast them for about 45 minutes, or until tender. Let them cool, then peel and chop.

In a food processor, combine the roasted beets, chickpeas, tahini, garlic, lemon juice, olive oil, cumin, salt, and black pepper. Blend until smooth and creamy.
