Preheat the oven to 180°C (350°F).

Peel and grate the beets.

In a large bowl, combine the flour, sugar, baking powder, and salt.

In a separate bowl, mix the grated beets, vegetable oil, almond milk, and vanilla extract.

Gradually add the wet ingredients to the dry ingredients, stirring until well combined.

Pour the batter into a greased loaf pan.

Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let it rest in the pan for 10 minutes.

Transfer the beet bread to a wire rack and let it cool completely before slicing.
