Ingredients
  • 1 cup Dried White Beans
  • 1 bunch Spinach
  • 1 medium Onion
  • 3 clove Garlic
  • 2 tablespoon Tomato Paste
  • 2 tablespoon Olive Oil
  • 4 cup Water
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Ground Cumin
  • 2 tablespoon Lemon Juice
Instructions
  1. Soak the dried white beans overnight in water.
  2. Drain the soaked beans and rinse them.
  3. In a large pot, heat olive oil over medium heat.
  4. Add chopped onion and minced garlic to the pot and sauté until golden brown.
  5. Add tomato paste, salt, black pepper, and ground cumin to the pot and cook for 2 minutes.
  6. Add the soaked white beans and water to the pot.
  7. Bring to a boil, then reduce heat and simmer for about 30 minutes or until the beans are tender.
  8. Stir in the spinach and cook for an additional 5 minutes.
  9. Remove from heat and let it rest for 5 minutes.
  10. Stir in lemon juice before serving.
  11. Serve hot and enjoy!
