Ingredients
  • 50 gram Basil leaves
  • 2 cup Zucchini
  • 1 medium Onion
  • 2 teaspoon Garlic cloves
  • 4 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 tablespoon Lemon juice
  • 4 tablespoon Parmesan cheese
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, sauté until fragrant.
  2. Add sliced zucchini and cook for 5 minutes.
  3. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes.
  4. Remove from heat and let it cool slightly.
  5. Transfer the soup to a blender and blend until smooth.
  6. Return the soup to the pot and reheat. Season with salt, black pepper, and lemon juice.
  7. Serve hot, garnished with fresh basil leaves and grated Parmesan cheese.
