  1. Rinse the barley and green split peas.
  2. In a large pot, heat olive oil over medium heat.
  3. Add chopped onion, garlic, carrot, and celery. Cook until vegetables are tender.
  4. Add barley, green split peas, vegetable stock, bay leaf, thyme, salt, and black pepper to the pot. Bring to a boil.
  5. Reduce heat and simmer for about 40 minutes or until barley and split peas are cooked.
  6. Remove the bay leaf and thyme sprig.
  7. Use an immersion blender or a regular blender to blend the soup until smooth.
  8. Stir in lemon juice.
  9. Serve hot, garnished with fresh parsley.
