  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas.
  3. Add the coconut oil, maple syrup, vanilla extract, and almond milk to the bowl and mix well.
  4. In a separate bowl, combine the flour, baking powder, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients and mix until well combined.
  6. Fold in the chopped walnuts.
  7. Grease a mini muffin tin or line with paper liners.
  8. Spoon the batter into the muffin tin, filling each cup about 2/3 full.
  9. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
