Ingredients
  • 1.5 cup Ripe bananas
  • 1/4 cup Maple syrup
  • 1/4 cup Coconut oil
  • 1/4 cup Almond milk
  • 1 teaspoon Vanilla extract
  • 1.5 cup Spelt flour
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Baking soda
  • 1/2 teaspoon Cinnamon
  • 1/4 teaspoon Salt
  • 1/2 cup Chopped walnuts
  • 1/2 cup Dark chocolate chips
Instructions
  1. Preheat the oven to 350°F (175°C). Grease a loaf pan.
  2. In a large bowl, mash the ripe bananas.
  3. Add maple syrup, coconut oil, almond milk, and vanilla extract to the mashed bananas. Mix well.
  4. In a separate bowl, whisk together spelt flour, baking powder, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in chopped walnuts and dark chocolate chips.
  7. Pour the batter into the greased loaf pan.
  8. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the banana bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. Slice and serve.
