Ingredients
  • 400 gram Eggplant
  • 300 gram Zucchini
  • 200 gram Bell peppers
  • 150 gram Onion
  • 2 clove Garlic
  • 400 gram Tomatoes
  • 4 teaspoon Olive oil
  • 2 teaspoon Herbs de Provence
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Slice the eggplant, zucchini, bell peppers, and onion into thin rounds.
  3. Crush the garlic cloves.
  4. In a baking dish, layer the sliced vegetables and garlic, alternating between them.
  5. Drizzle olive oil over the vegetables and sprinkle with herbs de Provence, salt, and black pepper.
  6. Cover the dish with aluminum foil and bake for 30 minutes.
  7. Remove the foil and bake for an additional 10 minutes, or until the vegetables are tender and slightly browned.
