Baked Sweet Potato Falafel
Falafel is a popular Middle Eastern dish made from ground chickpeas or fava beans. It is often served in a pita bread with tahini sauce and various toppings.

Preheat the oven to 200°C (400°F).

Pierce the sweet potatoes with a fork and microwave them for 5 minutes to soften.

In a large bowl, mash the cooked sweet potatoes and chickpeas together.

Add the onion, garlic, parsley, cumin, coriander, salt, black pepper, olive oil, lemon juice, chickpea flour, and baking powder. Mix well.

Shape the mixture into small patties and place them on a baking sheet lined with parchment paper.

Bake for 20-25 minutes, flipping halfway through, until the falafel is golden brown.

Remove from the oven and let them rest for 10 minutes.
