Ingredients
  • 1 medium-sized Eggplant
  • 2 medium-sized Zucchini
  • 2 medium-sized Yellow Squash
  • 4 large Tomatoes
  • 1 large Red Bell Pepper
  • 1 medium-sized Onion
  • 4 cloves Garlic
  • 4 tablespoons Olive Oil
  • 1 teaspoon Herbes de Provence
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Slice the eggplant, zucchini, squash, tomatoes, and red bell pepper into thin rounds.
  3. Thinly slice the onion and mince the garlic cloves.
  4. In a baking dish, arrange the sliced vegetables in alternating layers, slightly overlapping each other.
  5. Drizzle olive oil over the top and sprinkle with herbes de Provence, salt, and black pepper.
  6. Cover the dish with foil and bake for 40 minutes.
  7. Remove the foil and bake for an additional 20 minutes, until the vegetables are tender and lightly browned.
  8. Let the dish rest for 10 minutes before serving.
