Preheat the oven to 375°F (190°C).

Core the apples and cut a thin slice off the bottom of each apple to create a flat surface.

In a bowl, combine the dried apricots, cashews, honey, cinnamon, and vanilla extract.

Stuff the mixture into the cored apples.

Place the stuffed apples in a baking dish and pour water into the bottom of the dish.

Bake for 30 minutes or until the apples are tender.

Remove from the oven and let them rest for 10 minutes.
