Preheat the grill or oven to medium-high heat.

Prick the eggplants with a fork and place them on the grill or baking sheet.

Grill or roast the eggplants for about 25-30 minutes until the skin blackens and starts to shrivel.

Remove the eggplants from the heat and let them cool slightly.

Peel off the skin and discard it.

Chop the eggplant flesh and transfer it to a bowl.

Crush the garlic cloves and add them to the bowl.

Add tahini, lemon juice, olive oil, sesame oil, salt, and black pepper to the bowl.

Mix all the ingredients together until well combined.

Adjust the seasoning according to taste.

Garnish with fresh parsley.

Serve with pita bread or crudites.
