Ingredients
  • 1 medium-sized Onion
  • 4 minced Garlic cloves
  • 1-inch piece grated Ginger
  • 2 chopped Tomatoes
  • 2 cubed Potatoes
  • 1 sliced Carrots
  • 1 cup small Cauliflower florets
  • 1/2 cup frozen Green peas
  • 1 cup canned Coconut milk
  • 1 cup low sodium Vegetable broth
  • 1 tablespoon Curry powder
  • 1/2 teaspoon Turmeric powder
  • 1/2 teaspoon Cumin powder
  • 1/2 teaspoon Coriander powder
  • 1/4 teaspoon Red chili powder
  • to taste Salt
  • for garnish chopped Fresh cilantro
Instructions
  1. Heat oil in a large pan and sauté onions until golden brown.
  2. Add minced garlic and grated ginger, cook for a minute.
  3. Add chopped tomatoes and cook until they soften.
  4. Add potatoes, carrots, cauliflower, and green peas. Stir well.
  5. In a small bowl, mix curry powder, turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Add this mixture to the pan and stir to coat the vegetables.
  6. Pour in coconut milk and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes or until the vegetables are tender.
  7. Garnish with fresh cilantro and serve hot with rice or naan bread.
