  1. Trim the woody ends of the asparagus and chop into small pieces.
  2. In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until translucent.
  3. Add chopped asparagus and potato to the pot. Stir and cook for 5 minutes.
  4. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes or until the vegetables are tender.
  5. Use an immersion blender or transfer the soup to a blender to puree until smooth.
  6. Season with salt, black pepper, and lemon juice. Stir well.
  7. Let the soup rest for 5 minutes before serving.
  8. Garnish with fresh parsley and serve hot.
