Ingredients
  • 500 gram Potatoes
  • 250 gram Cucumbers
  • 250 gram Tomatoes
  • 100 gram Red onion
  • 20 gram Fresh parsley
  • 10 gram Fresh mint
  • 2 teaspoon Lemon juice
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Boil the potatoes until tender. Let them cool and peel.
  2. Cut the potatoes into small cubes and place them in a large bowl.
  3. Chop the cucumbers, tomatoes, red onion, parsley, and mint. Add them to the bowl with the potatoes.
  4. In a separate small bowl, mix lemon juice, olive oil, salt, and black pepper. Pour the dressing over the salad and toss gently to combine.
  5. Let the salad rest in the refrigerator for at least 30 minutes to allow the flavors to meld.
