Ingredients
  • 400 gram Cauliflower florets
  • 100 gram Dried apricots
  • 50 gram Pine nuts
  • 1 medium-sized Onion
  • 2 cloves Garlic cloves
  • 2 tablespoon Olive oil
  • 1 teaspoon Cumin powder
  • 1 teaspoon Coriander powder
  • 0.5 teaspoon Cinnamon powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Fresh parsley
  • 2 tablespoon Lemon juice
Instructions
  1. Heat olive oil in a large pan over medium heat. Add chopped onion and minced garlic cloves. Sauté until golden brown.
  2. Add cumin powder, coriander powder, cinnamon powder, salt, and black pepper. Stir well.
  3. Add cauliflower florets and sauté for 5 minutes until lightly browned.
  4. Add dried apricots, pine nuts, and a splash of water. Cover the pan and steam for 10 minutes until the cauliflower is tender.
  5. Remove from heat and let it rest for 5 minutes.
  6. Drizzle lemon juice and sprinkle fresh parsley on top.
  7. Serve the Apricot Pine Nut Cauliflower Pilaf hot.
