In another bowl, whisk together the egg, coconut milk, and water.

Gradually pour the wet ingredients into the dry ingredients while whisking until a smooth batter forms.

Heat a non-stick pan over medium heat and melt a small amount of butter.

Pour a ladleful of batter onto the pan and spread it out into a thin circle.

Sprinkle some sweet corn, peanuts, and sugar onto the batter.

Cook until the edges start to crisp up and the bottom is golden brown.

Fold the crepe in half and press it down gently.
