Jerusalem Artichoke Soup
Jerusalem artichokes are not actually artichokes, but a type of sunflower root vegetable.
This is vegan and gluten free recipe. Dish can be prepared in 50 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 10.

Peel and chop the Jerusalem artichokes, onion, and garlic cloves.

Heat olive oil in a large pot over medium heat.

Add the chopped onion and garlic cloves, and sauté until translucent.

Add the chopped Jerusalem artichokes and cook for 5 minutes.

Pour in the vegetable broth and bring to a boil.

Reduce heat, cover, and simmer for 20 minutes or until the Jerusalem artichokes are tender.

Use an immersion blender or transfer the soup to a blender to puree until smooth.

Return the soup to the pot and stir in the heavy cream.

Season with salt, black pepper, and fresh thyme leaves.

Simmer for an additional 5 minutes.

Serve hot, garnished with chopped parsley.
