Grilled Vegetable Po’boys
The term ‘Po’boy’ originated in New Orleans and refers to a traditional submarine sandwich made with French bread.

Preheat the grill to medium-high heat.

Slice the bell peppers, zucchini, eggplant, and red onion into thin strips.

In a bowl, combine olive oil, salt, black pepper, and garlic powder.

Toss the sliced vegetables in the olive oil mixture until well coated.

Grill the vegetables for about 5-7 minutes per side, or until they are tender and slightly charred.

In a small bowl, mix mayonnaise, lemon juice, and hot sauce to make a spicy mayo.

Slice the French bread into individual sandwich-sized portions.

Spread the spicy mayo on one side of each bread slice.

Layer grilled vegetables, lettuce leaves, and tomato slices on one side of the bread.

Top with the other bread slice.
