Sweet Potato and Fruity Fritter

Peel and grate the sweet potatoes.

In a large bowl, combine the grated sweet potatoes, flour, baking powder, cinnamon, nutmeg, and salt.

In a separate bowl, whisk together the egg, milk, and vanilla extract.

Pour the wet ingredients into the dry ingredients and mix until well combined.

Dice the apple and banana into small pieces and fold them into the batter.

Heat vegetable oil in a frying pan over medium heat.

Drop spoonfuls of the batter into the hot oil and flatten them slightly with the back of the spoon.

Fry the fritters for 2-3 minutes on each side, or until golden brown.

Remove the fritters from the pan and place them on a paper towel-lined plate to drain excess oil.
